The “Veggie” Quesadilla at Muddaddy Flats.

Muddaddy Flats on Fulton Street in Downtown Troy has taken quesadillas to the next level. The eatery does not simply specialize in quesadillas, the eatery is quesadillas.

The prices are reasonable considering you will also get 15 percent off your order with a student I.D. card.

Fulton Street is not new to serving worldly flavors in humble Downtown Troy, but Muddaddy Flats has managed to do this in a much different way.

Opened in Sept. 2012 by Dan Frament, Muddaddy Flats is new to the Downtown Troy scene.

Contrary to the slogan “nacho average quesadilla,” the setting itself is pretty average. Muddaddy Flats manages to be homey while also being homely.

The selection covers a broad range of styles replicating many traditional sandwiches and pizzas. The menu features options that mimic classic American sandwiches such as reubens, philly cheesesteaks, pulled pork, chicken parmesan and buffalo chicken.

Specialty tortillas can be added to any order including flour, whole wheat, multigrain, garlic, spinach, tomato basil, habanero salsa and black bean. The tortillas must be in short supply considering nearly a quarter of the options around at 1:30 p.m. were listed as “sold out”.

One quesadilla managed to stand out on the menu: the “Veggie.”

The “Veggie” consists of quinoa, corn, black beans, chopped spinach, tomato, peppers, onions cheddarjack cheese, mozzarella cheese and a buffalo wing sauce.

Each quesadilla comes with an optional side of sour cream, salsa or both.

The seemingly homemade salsa was cyanide to the taste and somewhat bitter. It seemed more like minced vegetables rather than the type of salsa you expect from a Mexican-American eatery.

Patience is necessary after you order, as the ordering process can take up to 15 minutes on a slow day.

Ordering a vegetarian friendly meal is often considered to be a lighter alternative to other menu choices. At Muddaddy Flats, however, the “Veggie” shattered these common expectations.

The “Veggie” was ordered on a habanero salsa flavored tortilla. The tortilla added a spicy zing to the quesadilla itself without clashing with other flavors.

The “Veggie” was a very busy meal. Delectable spinach dominated at least a quarter of the quesadilla.

It was a task to lift up the “Veggie” without an array of black beans parachuting out of the ends of each quesadilla. Because of its unorthodox fillings, it was the traditional cheddar jack cheese that revealed the dish’s identity as a quesadilla.

Muddaddy Flats has transformed the quesadilla from the average party appetizer to a work of art in progress. They are open Monday through Saturday from 11:00 a.m. until 8:00 p.m.
